I en tidlig alder begyndte jeg at bage og udvikle min viden på bagekurser hos Meyer og mange andre gode ‘bagefolk’. Efterhånden udviklede jeg min egen teknik, som er inspireret af Chad Robertson fra Californien. Bagt til mine venner, arbejdskammerater og familen.

For nogle år siden startede en god ven et lille sommerbageri på Ærø, som jeg arbejdede i, og derefter begyndte jeg at undervise folk i at skabe deres eget brød. Jeg flyttede med hele min familie til øen, og det simple og enkle liv blev til. Jeg bager rundstykker, landbrød og rugbrød og sælger fra min lille butik sammen med ost, marmelader og eddiker.

A light yellow in color with a creamy bubbling and an elegant and persistent sparkling. The nose is fragrant and expressive with fruity and floral notes.
